Spring has arrived and with it a variety of fresh and tasty fruits. To help make the most of the season’s ingredients, Claudia Genaro, chef and pedagogical consultant at the Gourmet Institute, lists practical recipes to prepare at home. Check!
Strawberry with chocolate: easy and versatile dessert
Easy to prepare, the combination of strawberry and chocolate can be served in individual bowls or in a dish. The recipe takes 200 g of milk chocolate or half-bitter, melted, and fresh strawberries. Just soak the fruits in the chocolate and let them dry.
Tip of the chef: if the strawberries are very ripe, prefer to consume them on the same day of preparation to better preserve the texture of the dessert. This option pleases both the taste and the presentation.
Roasted peach with cinnamon and chestnuts
To vary the consumption of the fruit, the peach can be baked to gain a soft texture and a more intense flavor. The recipe asks for cinnamon powder and chopped nuts to taste, in addition to honey for watering.
Cut the peaches in half and remove the lumps. Place the fruits on a baking sheet and sprinkle the cinnamon. Water with honey and bake in preheated oven at 180 °C until the peaches are soft. Remove and finish with the nuts. Serve next.
Tip of the chef: do not let the fruit roast for excessive time. The goal is to soften the peach without completely losing its structure. The result is a warm and aromatic dessert.
Whole Grape Jelly for Refreshing
The recipe is a practical option to prepare and leave in the refrigerator. Ingredients include colorless gelatin, water, whole grape juice and seedless grapes cut in half to decorate.
In a bowl, mix the gelatin with the water and let it hydrate. Then, mix in the grape juice. Distribute in small containers and bring to the refrigerator until it becomes consistent. Decorate with the grapes cut in half and serve next.
Chef's tip: since the whole grape juice already has a sweet flavor, try the mixture before adding sugar. The dessert is light and ideal for hot days.
Mango cream with yogurt and honey
Mango is a naturally sweet fruit and can be used to prepare a creamy dessert without requiring many ingredients. The recipe takes mango, natural yogurt, honey and mint leaves to finish.
Peel and cut the sleeve into pieces. Beat in the blender with the yogurt and honey until you get a uniform cream. Distribute in bowls and refrigerate for about 1 hour. Finish with mint leaves and serve next.
Tip of the chef: taste the mango before adding the honey. When the fruit is well ripe and sweet, it may not be necessary to add sugar or other sweetener.
Fruit salad with passion fruit syrup
A quick and refreshing dessert for the hottest days of the season. The fruit salad can combine different seasonal fruits, such as strawberry, peach, grape and mango, cut into pieces.
Sanitize and cut the fruits into pieces. Mix gently in a bowl. Reserve. In another container, mix the passion fruit pulp with the honey. Water the fruit salad with the syrup only at the time of serving.
Chef’s tip: Cut the most delicate fruits last and avoid preparing the salad well in advance to preserve the texture and freshness.
